Mediterranean Quinoa Salad
¼ cup Kalamata olives, sliced
2 cups Quinoa, cooked
¼ cup Feta, crumbled
½ Red onion, diced
½ cup cucumber, chopped
½ cup cherry tomatoes, halved
Dressing:
¼ cup flaxseed oil (or olive oil)
1 tbsp lemon juice
1 tbsp apple cider vinegar
1 tsp dried oregano
1 tsp grainy mustard
Combine first 6 ingredients in a large salad bowl. In a small bowl mix dressing ingredients with a whisk. Add to salad. Toss to combine.
Great additions:
Avocado, hard boiled egg, hemp seeds.
