Apple Crumble
Filling:
- 4 organic apples, peeled
- ¼ cup coconut palm sugar (I actually use about half this but most people prefer it a little sweeter. It also depends on how tart your apples are.)
- 1/4 tsp vanilla extract
- 1 tbsp coconut flour
- 1 tsp cinnamon
- Pinch of nutmeg
- 1 tbsp coconut oil
Chop apples and stew them in a pot with oil. Once soft add sugar, cinnamon and nutmeg. Mix until dissolved. Remove from heat, add coconut flour. Stir to combine then pour into glass baking dish
Topping:
- 1/3 cup quinoa flakes
- 1/3 cup brown rice flour
- ¼ cup coconut palm sugar
- 2 tbsp coconut oil
- 2-3 tbsp water
Mix all ingredients except water with a fork until coconut oil has been evenly distributed throughout. Add a little water at a time, mixing with fork, until mixture becomes crumbly and starts sticking together. Loosely spread the topping over the apple mixture.
Bake in 350°F oven for 20 minutes or until crumble is golden brown.
