Banana Bread
Ingredients:
1/2 Cup Coconut Flour
1/2 Cup Chickpea Flour
1/2 Tsp Baking Soda
1/2 Tsp Salt
2 Tbsp Raw Honey
2 Tbsp Coconut Oil, melted
1/2 Cup Coconut or Almond Milk, unsweetened beverage
4 Eggs
1 Tsp Vanilla Extract
2 Tsp Cinnamon, ground
3 Banana, very ripe
1/4 cup dark chocolate chips, 80% (optional)
Directions:
Preheat oven to 350ºF. In a large bowl, with a hand blender, mix together honey, coconut oil, milk, eggs, and vanilla. In a second bowl, whisk together flours, salt, baking soda and cinnamon. Slowly add the flour mixture to the wet ingredients until they a fully combined. Mash bananas into the mixture, add chocolate chips is using. Pour batter into a parchment lined bread pan (approx 9″x5″). Bake for 45 minutes, until you can insert a toothpick in the center and it comes out clean.
This banana bread is super moist and delicious. A great addition to any summer camping or cottage trip or weekend brunch.
