Big Salad Day 3


Yup, beets again. 🙂 Your athletic endurance, stamina and cardiovascular health will be thanking me!

Did you know that studies have shown that beets are excellent for cleansing your liver (a little pre-cleanse before your Friday night debauchery) as well as benefiting your heart health by lowering blood pressure and acting as an anti-oxidant. Baby spinach

1 Granny Smith apple, cut into 1 cm pieces

4-5 stalks of celery

1 small carrot

1/4 small beet thinly sliced, raw

3″ piece of cucumber, cut into 1 cm pieces

1 oz feta

1 tbsp hemp seeds

1 tsp Dulse flakes (high in iodine, a necessary mineral for healthy thyroid function)

1 tsp chili flakes

1 tsp olive oil

1 tsp balsamic vinegar


Chop and toss all ingredients.

This is a great salad for lunch because it won’t go soggy. If you keep the spinach separate you can add the dressing to the rest of the ingredients when you prepare the salad and just toss in the spinach when you are ready to eat.
