Big Salad Day 7

Today was a dinner salad kind of day. I did a late workout and needed some good muscle building protein. This salad is filling and delicious.

 

Ingredients:

4 romaine leaves
1 tomato, diced
1/4 avocado
1 tsp finely diced red onion
1 hard boiled egg
3 oz cooked chicken breast, chopped
1 tsp olive oil
Squeeze of lemon juice
Fresh cracked salt and pepper

Directions:

Place romaine leaves in the middle of a plate. I keep the leaves whole because it makes for good presentation.
In a small bowl mash avocado with olive oil, red onion, salt and pepper and juice from a wedge of lemon. Spread avocado mixture on the inside of the lettuce leaves. Top with diced tomatoes, chopped egg and chicken.
Add a few more cracks of pepper on top and another squeeze of fresh lemon juice.
