Big Salad Day 8
I found this pasta at Costco. I don’t buy a lot at Costco. Number 1 reason = I can’t leave there without spending at least $200. Number 2 reason = they sell a lot of mass-produced crap.
Having said this, lately I have been finding more and more healthy options at Costco. I always get really excited..and afraid that they will no longer stock it the next time I shop there. So this time I bought 6 boxes! 🙂
This pasta packs a protein-punch but I still keep it as the behind the scenes ingredient in this salad. Let the veggies be the star!
Ingredients:
1/2 cup lentil pasta, cooked
1 red pepper, seeds and core removed, diced
1 yellow pepper, seeds and core removed, diced
1 tomato, diced
1/2 avocado, cut into small cubes
1 green onion, diced
1 oz feta cheese, crumbled
1 tsp olive oil
sea salt & pepper to taste
Directions:
Mix and eat!
