Pumpkin Spice Protein Bites

Ingredients: (makes a batch of 40 small protein bites)

2 cups raw walnuts

2 cups raw almonds

1 cup raw pecans

1/4 cup coconut flour

2 scoops Progressive Vegan Vanilla Protein Powder

1 cup dates

1 cup pureed pumpkin

1 tbsp vanilla extract

1 tbsp pumpkin pie spice

1 tbsp ground cinnamon

 

Directions:

In a food processor add nuts, flour and protein powder. Mix until it becomes a rough flour. Add in all other ingredients. Mix until the mixture begins to pull away from the walls of the food processor, scraping down the sides of the bowl to ensure it mixes thoroughly.

Roll into 1 inch balls and place in mini muffin cups. Store them in a tightly sealed container in your freezer. Remove from freezer 10-20 minutes before serving. These will keep in the fridge for a few days or in the freezer for at least a month.
